Job Description
Zambri’s is an award-winning, 120-seat Italian restaurant and a cornerstone of Victoria’s dining scene for over 26 years. Known for our seasonal approach to food, thoughtfully curated Italian wine program, and warm, professional hospitality, we are seeking an experienced General Manager to lead our front-of-house operations and help steward the next chapter of our restaurant.
This is a senior leadership role for a hospitality professional who thrives in a dynamic environment, leads with clarity and integrity, and understands how great restaurants are built through strong systems, empowered teams, and a consistent presence on the floor.

The Role
The General Manager oversees all front-of-house operations and works closely with ownership and the Executive Chef to ensure excellence across service, people, systems, and guest experience. This role balances strategic oversight with hands-on leadership and plays a key role in private event sales and execution.
Key Responsibilities
Leadership & Culture
- Lead, mentor, and develop the FOH leadership team and staff
- Set clear expectations and uphold service and workplace standards
- Foster a respectful, professional, and engaged team culture
- Recruit, train, coach, and evaluate FOH leadership and staff
Guest Experience
- Maintain a visible, supportive presence during service
- Build meaningful relationships with regulars and new guests
- Support Floor Manager during peak service times
- Handle guest concerns with professionalism, care, and discretion
- Oversee guest feedback and online reviews
Private Events & Sales
Private events are a vital and growing part of Zambri’s business. The General Manager plays a central role in driving this revenue stream while ensuring every event reflects our standards of hospitality.
- Serve as the primary point of contact for all private event and group dining inquiries
- Lead the full event lifecycle, from initial inquiry and sales conversation through planning, confirmation, and execution
- Build client relationships and guide menu, wine, pricing, and service recommendations
- Coordinate timelines, staffing, room setup, staging, and logistics with the leadership team
- Ensure all event details are clearly documented, communicated, and flawlessly executed
- Oversee event contracts, deposits, billing, and post-event follow-up
- Identify opportunities to grow private event revenue while maintaining an exceptional guest experience
Operations & Administration
- Collaborate with ownership and the Executive Chef on business goals and execution
- Oversee scheduling, labour efficiency, and cost controls
- Manage tip systems, cash-outs, and administrative accuracy
- Ensure POS and reservation systems are accurate, optimized, and well maintained
- Oversee inventory systems, par levels, and purchasing processes
- Troubleshoot operational and technical issues with a calm, solution-oriented approach
Wine, Beverage & Facilities
- Support wine inventory management and monthly counts
- Oversee beverage-related POS programming
- Collaborate with present Wine Director with goal to assume this role
- Ensure equipment, glassware, and service tools are well maintained
What We’re Looking For
- 2+ years of senior restaurant management experience (GM, Restaurant Manager, or equivalent)
- Strong leadership, organizational, and communication skills
- Deep understanding of hospitality, service flow, and team dynamics
- Solid food and beverage knowledge
- WSET or comparable experience
- Comfortable with POS systems, spreadsheets, and Open Table reservation platforms
- Calm, confident, hands-on leadership style
- Ability to balance strategic thinking with day-to-day execution
